Recipe: Fig & mushroom salad – a perfect summer lunch

Tired of preparing a meal at home? Today I will share my lunch recipe with you – another simple, easy and healthy meal. Using fresh figs and mushrooms, this is a perfect weekend lunch or entree for your dinner.

Ingredients | serving for 2 people

  • Fresh figs : 2
  • Fresh mushrooms : 8
  • Buffalo mozzarella cheese : 1 tub (about 125g)
  • Thin prosciutto : 2-4 pieces
  • Green olives (pitted) : 10 pieces
  • Green rocket : 2 cups
  • Extra virgin olive oil : as you wish
  • Salt and pepper : as you wish

Cooking Methods

1 Cut the ingredients

Cut a fig into 8 pieces. Slice mushrooms and sprinkle a little salt. Rip (or slice) the buffalo mozzarella into small pieces. Rip prosciutto into 2-3 pieces.

2 Place the ingredients on your plate

Creatively place all the ingredients on your plate…that’s all!

I like to place mushrooms and green rocket as a base, then add other ingredients – sliced figs, ripped buffalo mozzarella cheese, green olives, and finally prosciutto to make your salad appealing. At the end, sprinkle extra olive oil over the salad. Super easy!

Enjoy the combination of sweetness and saltiness

The sweetness from the fig and the saltiness from prosciutto, mozzarella cheese and olives make the perfect combination. 10 mins is enough to put all ingredients together and impress your friends or family. I hope you try this and enjoy it.
